Almond Pancakes – Light, Nutritious & Delicious

As part of our Healthy Recipes by Our Chef series, Chef Arrate continues to share simple and nutritious recipes with the Sage College community. Her aim is to help families enjoy balanced meals at home without giving up flavour or enjoyment.

These almond pancakes are a fantastic alternative to traditional recipes. They are light, naturally satisfying and perfect for breakfast, brunch or a healthy snack during the day.

Cooking time: 15 minutes
Servings: 10 portions

Ingredients:

• ½ cup of yoghurt
• 2 eggs
• ⅔ cup of almond flour
• 1 teaspoon of baking powder
• 1 teaspoon of honey

Method:

  1. In a bowl, mix the yoghurt and eggs until smooth.
  2. Add the almond flour and baking powder, and mix until fully combined.
  3. Stir in the honey.
  4. Heat a non-stick pan over medium heat.
  5. Melt a small amount of butter in the pan to enhance the flavour.
  6. Pour small amounts of batter and cook each pancake for 1–2 minutes on each side, until golden.

Chef’s tip:
Heating the pan properly and adding a small amount of butter will enhance both the flavour and texture of the pancakes.

Super easy to make and incredibly tasty.
