Healthy Banana Oat Pancakes
Our wonderful Sage College chef thought it would be a great idea to share some of her signature recipes with the Sage College community, so that both our students and their families can enjoy healthy eating without sacrificing flavour or the pleasure of good food. We begin this new blog series with one of her favourites: nutritious, incredibly fluffy banana oat pancakes.

These pancakes are perfect for breakfast or as a wholesome snack, and they require only five simple ingredients.

Why we love them
They are quick to prepare, naturally sweet, and ideal for children and adults alike. Our Chef Arrate prepares them regularly in the boarding house kitchen, and students always ask for more.

Ingredients (makes 9–10 pancakes):
• 1 ripe banana
• 2 eggs
• 120 g oat flour (or rolled oats blended)
• 120 ml milk or a plant-based alternative
• 1 tablespoon baking powder (7 g)

Method:

  1. Mash the banana in a bowl until smooth.

  2. Add the eggs and whisk until combined.

  3. Mix in the oat flour and milk to create a smooth batter.

  4. Stir in the baking powder.

  5. Heat a good non-stick pan on medium heat. There is no need to use oil – simply pour the batter directly onto the pan.

  6. Cook each pancake for 1–2 minutes on each side until golden and fluffy.

Chef’s Tip:
Use a high-quality non-stick pan to achieve the best texture. The pancakes rise beautifully and remain soft and airy.
